Fresh Peach Bellini
2 yellow flesh peaches, peeled, seeded and diced
2 teaspoons caster sugar
Juice from 1 lemon
1 bottle chilled prosecco sparkling wine
2 slices of peach for garnish
Puree the peaches, sugar and lemon juice in a blender. Pour 4 tablespoons of peach puree into champagne flute or beer flute and carefully fill with sparkling wine. Serve immediately. Serves 2-4 depending on size of flute.
