Sparkling wine (cava or prosecco)
A squeeze of lemon, plus a twist of lemon for garnish
To make the syrup: In a small saucepan, mix 1/2 a cup of water with 1/2 a cup of honey and bring to a simmer. Once the honey has dissolved in the water, add a chopped 4 inch knob of ginger to the mixture and a pinch of crushed saffron. Remove from heat. Allow the syrup to completely cool then double strain into a container.
To make the drink: Fill a cocktail shaker with ice. Add the ginger-saffron syrup and gin to the shaker and shake for 30 seconds. Strain into a champagne glass, top with sparkling wine and a squeeze of lemon. Garnish with a twist of lemon. (Serves 1)
