Grama Lucy's Chicken Thighs
1 package chicken thighs, skin on, bone in (8-10 pieces)
Fresh cracked pepper
Preheat oven to 350. Wash each chicken thigh thoroughly, making sure to wash under skin removing the gelatinous stuff. Generously sprinkle each thigh with salt and pepper. Place thighs in oven proof covered roasting dish (I use my stoneware roaster). Roast for 2 hours at 350 degrees. Remove lid and broil on medium until skin is golden and crisp. (About 4 minutes).
