~Check your table linens and organize them (that means clean and iron if needed) for the Wednesday table set up.
~Go to the grocery store early in the morning (to avoid the crowds) and pick up all of the things on your list that you made on Monday, including turkey and wine. If you forget a few things, send reinforcements to pick those up later today or tomorrow (in a pinch, HEB is open until 2:00 p.m. on Thanksgiving Day).
~Brine your turkey if you are doing a dry brine.

~Brine your turkey if you are doing a wet brine. There is still time for a dry brine if you prefer.
~Prep all of the side dishes as much as possible.
~Make the things you can, like cranberry relish and desserts.
~Have a reliable family member run to the neighborhood bakery early in the day for some pastries for Thanksgiving morning so breakfast is covered for that day. They can also pick up last minute pies and rolls if you are not making them at home.
~Wake up early and check that turkey. Be sure to take it out of the refrigerator 30 minutes to an hour before putting it in the oven.
~Make sure all of the wine is at the proper temperature or in the refrigerator.
~Finish up the remaining sides early in the day, making the turkey your main focus as the day progresses.
~Depending on when you plan to serve your meal, allow a few hours prior for snacks and simple appetizers with drinks.
~Some people like to make the gravy using the drippings from the turkey. If that's your preference, do that as soon as you pull the turkey from the oven while you allow the turkey time to rest before carving.
~Put your feet up, go see a movie, get a massage, and/or go out to dinner. The most complicated thing you should do today is reheat leftovers.
