Lavender-Elderflower Champagne Cocktail
1/2 ounce lavender simple syrup (reduced by half to balance out sweetness)
1/2 ounce St.-Germain (reduced by half to balance out sweetness)
Champagne or other sparkling wine
1 sprig fresh lavender for garnish (optional)
Simple Syrup: Combine 1/2 cup lavender, 1 cup water, 1 cup water in a saucepan and bring to a simmer. Once the sugar is dissolved, remove from heat and let cool. Strain through a fine strainer and chill in the refrigerator.
Drink: Pour the simple syrup and St.-Germain In a champagne flute and top with champagne. Garnish with a sprig of lavender.
