Caprese Matzo Brei (Dairy, Gebrokts)
2 tablespoons butter or oil
1/2 large onion, diced small
1 piece matzo
2 eggs, whisked
1 plum tomato, diced small
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1/8 cup fresh mozzarella, diced small
2 tablespoons basil, chiffonade
Heat 1 tablespoon of butter or oil in a large nonstick sauté pan over medium heat. Add onions and cook until translucent, about 7 minutes. Break matzah into pieces and soak in warm water for 15 seconds to soften. Drain well. Whisk eggs and add in matzah, onions, tomatoes, salt and pepper. Heat another tablespoon of butter in the pan over medium heat. Add brei mixture and cook until eggs are set, about 3 minutes. Add cheese, cover to melt. Garnish with basil and serve!
