Prosciutto, Goat Cheese, Arugula Pizza
Dough (store bought at HEB freezer section)
1-8 ounce log goat cheese
12 or more very thin slices of prosciutto
2 handfuls of washed and dried arugula
2 tablespoons olive oil
Preheat oven to 400 degrees. Bring dough ball to room temperature. Shape pizza dough using hands or rolling floured rolling pin. Rub 1 tbsp. olive oil on shaped pizza dough. Generously spread goat cheese on top of oil. Put slices of prosciutto on top of cheese. Place in oven for 20 minutes for crispy crust. In a bowl mix lemon juice, 1 tbsp. olive oil and arugula. Remove pizza from oven and throw the arugula salad on top. Slice pizza, pour wine and enjoy.
