Black lava salt or kosher salt, optional (I found black lava salt at Central Market)
1 1/2 ounces silver tequila
1 1/2 ounces fresh lime juice
1 ounce pomegranate syrup (see Note)
1/4 ounce pomegranate juice (to deepen the color)
4 dashes of orange bitters (optional)
Spread salt onto a shallow dish. Place a lime wedge along the rim of a martini glass to moisten the surface. Dip the rim in the salt to coat. Place in the freezer to chill. In an ice-filled shaker, combine tequila, lime juice, pomegranate syrup and extra bit of pomegranate juice. Shake well for 30 seconds. Strain into the chilled martini glass. (Serves 1)
Note: To make pomegranate syrup, heat 1/4 cup unsweetened pomegranate juice with 1/4 cup sugar in a small pot and whisk until sugar is dissolved over low heat. Allow to come to room temperature then chill.
