Grilled Flat Iron Steak
Flat iron steak (1/2 to 3/4 lb per person depending on number of sides)
Prepare grill to medium high. Massage meat with olive oil, generously add salt and pepper to both sides of meat. Bring to room temperature. For medium to medium rare (pink in center) grill first side for 4 minutes. Turn and grill other side for 4 minutes. Remove from grill and let rest on cutting board for 4-5 minutes. Slice thin. Serve with corn tortillas or bread and sides.
