The Thin Mint
1 ounce London Dry Gin
3/4 ounce creme de menthe
1 ounce creme de cacao
2 scoops vanilla ice cream (I used Häagen-Dazs®)
4 thin mint cookies
1 cup ice (I added to recipe to make it colder and thicker)
In a blender add 1 ounce gin, 3/4 ounce creme de menthe, 1 ounce creme de cacao, 2 scoops of vanilla bean ice cream, a handful of mint leaves, and 4 cookies and ice. Blend by pulsing until almost smooth, then pour into glasses. Garnish with mint leaves. Serves 1-2 drinks depending on size of glass you choose.
